What if President Nelson asks the LDS to actually live the Word of Wisdom? I mean actually live it?
More grains, less meat, allow mild drinks...
How befuddling would it be and how would the average member react? I mean avoiding coffee, tea, smokes and booze is one thing but actually changing your diet to reflect the Lord's will? Imagine the mayhem of "moderate use of Meat". Would veganism and vegetarianism become the Pharisaical position?
How would it play. What if the change coming to the WoW is actually living it?

First of all, they would probably change the focus to verse 3:

It's kind of interesting that the reason for not drinking wine and strong drink is "In consequence of evils and designs which do and will exist in the hearts of conspiring men in the last days." This seems to support the idea that Joseph was afraid of someone trying to poison him with booze (which means he drank booze), just as it was rumored may have later been done to Samuel to keep him from succeeding Joseph.

Herbs are vegetables, not just the herbs used as seasoning, but all things herbaceous that come from the vegetative part of plants. The two words “vegetable” and “herb” are actually pretty much synonyms. As opposed to the things that come from the fruit part os plants. So, the roots, stems, leaves are all herbaceous or vegetables, while the seeds and fruit are seeds and fruit. So, tomatoes, squash, corn, green beans, all fruit. While potatoes, carrots, celery are vegetables or herbs.

They would never let the Cougars risk losing muscle mass. Vegan diets are very hard to get right with regards to athletics. Meat is kind of "easy mode" in the diet when it comes to being an athlete.

That would be a hard thing for those on Keto and Paleo diets, not to mention the huge number of fast food lovers.
Good faith does not require evidence, but it also does not turn a blind eye to that evidence. Otherwise, it becomes misplaced faith.
